Family Meatloaf

Cook Time: 1 hour 15 minutes
Ingredients:
2 pounds 80% lean ground beef
1 cup soft bread crumbs
3/4 cup finely chopped onion
1/2 cup milk
1 large clove garlic, crushed
1 egg, slightly beaten
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme leaves, crushed
1/3 cup prepared barbecue sauce
1. Heat oven to 350 degrees. In large bowl,
combine all ingredients except barbecue sauce; mix lightly but
thoroughly.
2. On rack in broiler pan, shape beef mixture
into 10 x 4-inch loaf. Bake in 350 degree oven 1 hour and 10
minutes. Generously brush meatloaf with barbecue sauce. Continue
baking 5 to 10 minutes to medium doneness (160 degrees) or until
center is no longer pink and juices show no pink color.
3. Cut meatloaf crosswise in half. Cut one
half into 8 slices and serve. Tightly wrap remaining half; refrigerate
up to 2 days for use in Southern BBQ Meatloaf Sandwiches.
Makes 4 servings (serving size: 2 slices).
