Double
Batch Beef & Beans
Prep

Cook Time: 9 1/4 hours
Ingredients:
2 1/2 pounds beef for
stew, cut into 3/4-inch pieces
2 cans (14 1/2 ounces each) diced tomatoes with garlic and onions,
undrained
1 can (15 1/2 ounces) great Northern beans, rinsed, drained
1 can (15 1/2 ounces) kidney beans, rinsed, drained
1 teaspoon salt
1/2 teaspoon pepper
1. In slow cooker, combine all ingredients;
mix thoroughly. Cover and cook on low 8 to 9 hours or until
beef is tender (no stirring is necessary during cooking).
2. Divide beef mixture in half (approximately
5 cups per portion). Use one portion of beef mixture to prepare
10-Minute Beefy Chili or
Easy Beef, Vegetable & Tortellini
Soup. Cover and refrigerate remaining portion up to 4 days
for later use. Makes approximately 10 cups beef mixture.
